This is another Szechuan classic that I adore. A plate of this Mapo tofu with a bowl of steaming hot rice is the comfort food I often crave for in the cooler months.
Silken soft tofu, minced meat and the numbing spiciness from the chilli oil and Szechuan peppercorns are the three main characteristics of this dish. There are many variations, but the recipe I have today has the well balanced sweetness and spiciness that will suit most tastebuds.
Pardon me for a short post today. It's school holiday and I am packing for our short trip to Melbourne tomorrow. Will write more after Easter.
Mapo Tofu Recipe
Serves 4
Ingredients
600 g silken firm tofu
300 g minced pork or beef
1 tbsp cooking oil
2 tsp minced garlic
2 tbsp spicy soy bean sauce
2 tsp soy sauce
2 tsp sugarSalt
200 ml chicken stock
1 tbsp cornflour + 2 tbsp water
2 tbsp Szechuan chilli oil (Recipe Here)1 tsp ground Szechuan pepper
2 tbsp chopped spring onions
Method
- Sliced the tofu into 2cm cubes.
- Heat a pan of water until it reaches just below boiling point. Add tofu cubes and scald for 2 minutes.
- Remove, drain and set aside.
- Heat a tbsp of cooking oil in a wok under medium high heat. Add minced pork or beef until it's browned and cook.
- Add garlic and spicy bean sauce and stir-fry for a further 1-2 minutes until fragrant.
- Reduce heat to medium low heat. Add tofu, soy sauce, sugar, salt and chicken stock. Give it a gentle stir, cover with lid and bring it to a slow simmer.
- Remove the lid, add the cornflour water, give it a quick stir until mixture is thicken.
- Turn off the heat, sprinkle with ground Szechuan pepper and chopped spring onions. Ladle the Chilli oil.
- Serve immediately with steamed rice.

I love mapo tofu too :D I'm so jealous of all the school kids on school holidays :( Have fun in Melbourne! :D
@ muppy: the spicy soy bean sauce is sd in jar and available in most Asian supermarkets.
@ Ribbon Clown: I use the silken firm tofu which holds the shape beautifully. Need to be extra gentle during cooking.
This is my all-time favourite dish for going with steamed rice.
Have a nice trip, Ellie.
Happy Easter, and have a nice trip
What a delicious way of eating tofu!
I really like the size of your photos. I hope I can make my blog photo size like this. But aside from that, the size of your photo makes me want to bite that tofu. Looks appetizingly good! Good work as always! :)
This looks lovely Ellie. Perfect for cosying up with in the coming winter months!
karma for cooking my favorite dishes. My mom always says that the right tofu and the step 6 are the most important parts of making this dish. Have a wonderful trip!

I have to agree, the ultimate Asian comfort food. I have always wanted to learn how to make this. Thank you for finally teaching me :)

One of my fave comfort foods too! More chilli oil! :)
Perfect! Another great recipe and a favorite of mine as well. You never cease to impress with your great cooking.
I love tofu and this dish looks so flavorful. I made the wontons from your post with my daughter last weekend. I'll post about them soon and mention you in the article. We LOVED them. Unfortunately, I could about 50 in one sitting probably. Have a wonderful visit to Melbourne.
This is one of my favourite comforting wintertime dishes. A bowl of this is sure to get you warmed up. I once asked my mother for the recipe and she said that the name "MaPo" is so because this dish is so soft that it can be eaten by senior citizens with no teeth! "Ma" and "Po" are two words meaning grandmother. It sounded like she might be pulling my leg though. Thoughts?
I have never had mapo tofu before, cause I am not a big fan of tofu. It looks quite delicious though, so maybe I have to overcome my dislike of it!
I used to enjoy this dish whenever I eat out at a chinese restaurant, but of recent I prefer to eat in especially now the boys can cook too! Must get them to learn this dish! Yum!
This looks so good Ellie - the colour of the sauce is fabulous.
I've never had mapo tofu, it looks amazing. I might try it without the meat and with veggie stock instead and see if it still works.
Wah, your recipe so easy!

I love tofu, especially on weeknights when meat seems too heavy if I plan on doing any work/studying afterwards. This looks simple, classic, and delicious.

One of my favs! This is so good with rice!
I rarely make anything with tofu but I'm sure tempted with this, Ellie. Isn't it unusual to pair tofu with meat? Love the flavors you've used!
