Homemade Sweetened Condensed Milk

I have come to know about this ridiculously easy way to make sweetened condensed milk at home a long time ago, but with so many other interesting recipes to work on, it escaped my mind until now.

Not until I received a comment from Sandra Mort that prompted me to share this brilliant recipe with you.

"Have you ever made condensed milk? I've seen recipes for homemade dulce de leche but not condensed milk. I try hard to not buy Nestle's, which is the most common brand. Suggestions?"

I grew up in a typical Malaysian household and sweetened condensed milk was a daily staple. We added it to our coffee, tea, Milo and Olvatine. We drizzled it on desserts and dipped fruits in it. Everyone has their own favourite way of using sweetened condensed milk, like making a pot of condensed milk fondue. Totally sinful but nice!

Why make your own when sweetened condensed milk when it is easily available from the supermarket shelves? You may ask.

Because you can make it low-fat with skimmed milk powder. You can adjust the sweetness to your likeness. You can replace the butter with healthier alternatives or totally omit it for a fat free version. You can also control the thickness to a consistency that tickles your fancy.

4 ingredients, 5 minutes cooking time, what is there not to like?

Homemade Sweetened Condensed Milk
Makes 1/2 litre

Ingredients

50 g butter
220 g sugar
1 cup (250 ml) water
200 g milk powder

Method
  1. Add butter, sugar and water in a saucepan and gently boil under low heat until sugar is dissolved.
  2. Turn off the heat and whisk in milk powder, 50g at a time, until it's completely dissolved.

  3. Let it cool and use it immediately. It doesn't store well, so makes as you need.

Is that how easy it is? There is a recipe for a candy in the Philippines called Pastillas de leche that uses the same ingredients but I never thought it would work - but now that I think of it - it does taste like condensed milk! I might try your recipe as a base for the candy... Thanks for sharing the recipe Ellie...

Wow - cosmic link to the universe!!! On Friday I was visiting a culinary college here in Edinburgh and while I was talking to one of the students from last year she mentioned that she was trying to make her own version of condensed milk (gluten and diary free though!) but it hadn't work. Thank you so much for the recipe! It's really ironic because due to the operating cost of producing Sweetened Condensed Milk, it is not available in Malaysia anymore! It has been replaced by 'Sweetened Creamer' which is made from Palm Oil as opposed to Dairy fat. The taste is quite different. To me the Palm oil version tastes less creamy and sickeningly sweeter.

@ Mihcelle: Replace full cream milk powder with skim milk powder and use margarine instead of butter.

I never even knew how condensed milk was made! Always thought it was milk boiled over a low heat for ages...kind of like evaporated milk.

I love condensed milk in tea or coffee, and on toast. Or just eating it by the spoonful by itself. :)

oooh, brilliant blog. would you know if your homemade condensed milk can by extension be made into dulce de leche, or toffee? btw, malaysia no longer has real condensed milk..not that it bothers me, as i dont take the stuff, but all we get are condensed creamers....eugh, that's like margarine.

Tell you what is even easier. Get a small tin of upopended condensed milk and simmer it in a pad of water. Instant toffee sauce. Amazing.

This is excellent. I actually have a whole container of powdered milk at home (purchased to make the Momofuku 'crack pie'). I found said pie too sweet so have only used the powdered milk once.. good to know I can convert it into sweetened condensed milk!

Hi Ellie, i'm used to making my homemade condensed milk, without milk powder though (just whole milk, sugar, a little butte)
but i recently found this in a store

would you think it would work if used in your version?(which i'd love to try as well)
and btw, hope you can answer this too, you know some people use some milk powder in ice creams, think they get cremier this way (do they?) still, can i use that milk i bought?
i ask because know i'm starting doubting about the fact that it can be used in recipes (on the site it reads that it's for babies) but i don't get to find any other milk powder apart from that :(

By doesn't store well - what do you mean? One day? Three days? Can you can it? Freeze it? I will try to adapt the recipe to make with my Thermomix. BRILLIANT. Who wouldn't want to make their own. The question of your friend or reader is my question, too. I have asked it more than a few times and am so so so so so so appreciative of this recipe. Of course, I love your beautiful site and many other recipes, too!... but, this is singing my song today!

@ Min: This method is only ideal with milk powder. If using liquid milk, you will need to slowly boil it down for a long time until the liquid reduce by 70%.

@ Nettie: you need to whisk the mixture fast and vigorously to obtain a smooth texture.

This is great. Thanks for posting it, but I have a question...I make Dulche de leche sauce by boiling a can of SCM for about three hours. If I use this recipe I don't have a can. Is there a way to turn this into Dulche de Leche sauce?
