Mango Pudding (Mango Mousse with Sweetened Condensed Milk Chantilly)

Here is the question: "Chocolate based or fruit based dessert?".

For me, it is always the latter. Best still if it is made out of mango. I blame it to my upbringing. Growing up in a tropical country, I was surrounded by an abundance of sweet, juicy fresh fruits all year round. My mum always brought out a fruit platter instead of a dessert after a meal. Papaya, star fruit, cloud apple (jambu air), mangosteen, mango and custard apple are some of my favourites. Among all the Asian fruit based desserts, mango pudding has to be my favourite. A dessert that is on my must order list during yum cha.

I am giving this popular dessert a modern take. The gelatine set mango pudding has been replaced with a light as air mango mousse using Italian meringue, pure mango puree and evaporated milk. I then topped it up with a sweetened condensed milk chantilly to give it a perfect finishing touch. Dig in!

Mango Pudding (Mango Mousse with Sweetened Condensed Milk Chantilly) Recipe Serves 4

Ingredients

150 g evaporated milk, chilled
Condensed milk chantilly (recipe follows)

Mango puree:
500 g mango flesh from 4 mangoes, diced
80 ml water

Italian meringue:
55 ml water
110 g sugar
2 egg whites

Sweetened condensed milk chantilly:
250 ml thickened cream
2 tbsp sweetened condensed milk

Method

  1. To make mango puree: Boil the diced mango and water with high heat for 10 minutes until the mixture thickened and ressemble jam like texture.
  2. Use a blender to purée it until smooth. Push it through a fine sieve to get rid of the fibre. Set aside to cool.
  3. To make Italian meringue: Add water and sugar in a saucepan, gently heat and stir until sugar is dissolved. Turn up the heat and continue boiling until it reaches hard ball stage (128C).
  4. Beat egg white with an electric mixer until foamy. Set the electric mixer on slow setting, pour in the boiling sugar syrup in a slow and steady stream. Continue the beating until the mixture reaches room temperature. It will look shiny and smooth.
  5. To make sweetened condensed milk chantilly: Beat cream and condensed milk together with an electric mixer until soft peaks form.
  6. To make mango mousse: Whip the chilled evaporated milk until foamy. Mix 100 g of Italian meringue with mango puree. Fold in whipped evaporated milk.
  7. Divide the mousse in 4 dessert glasses. Chill in the fridge until set.
  8. Serve with sweetened condensed milk chantilly.

Yum, this looks great!! I have just got a Thermomix for Christmas and my little head is spinning with the thought - how can I make this in the Thermomix??? I am like you - love mangos - fruit based desserts are great - you have nailed it on the head with this one!!

Wow Ellie, that looks amazing! I would never have thought of making a mango mousse and your recipe seems quite straight forward. I will have to add it to my 'to cook' list. I would mostly opt for the chocolate based dessert but when it comes to mango, I think I might make an exception!

That is a tough question for me. As much as I love my chocolate I also love my mango and tropical fruits. If this was on offer along side a chocolate tart it would be torture for me to decide lol. Will be making this recipe for sure, thanks for sharing it!

Just imagining how light and luscious the Italian meringue would make this mousse... OK, now drooling! This also reminds me of the mango pudding at yum cha, but yours looks much more sophisticated.

I always pick fruit. Especially if it looks as good as THIS! Uhmmmm unless of course you are making the chocolate dessert, then I'd say "can I have half of each?" :)

If I'm having a heavy meal (and of course holiday meals are almost REQUIRED to be heavy) then I'd much rather have a fruity dessert. It just seems so much more virtuous! This mousse looks dreamy. The perfect texture - light and yet satisfying.

@ Alina: You will need ripe mango to make this dessert. Green ones are too sour and different texture.

I love mangoes too. If there is no chocolate dessert, I will pick a fruit one but it must be mango. :) I love paperseed mangoes and egg mangoes. :D

Speaking of condensed milk, there is a price increase for condensed milk in Malaysia. 30 cents per tin!

Truth be told, I would pick chocolate desserts over fruit ones... HOWEVER, mango and other tropical fruits tend to woo me in their direction, and this mousse looks Heavenly.

Had I found this recipe three hours ago, I totally would have made it. We had Indian for dinner tonight and I am always scrambling for a good dessert to go with it. I always fall back on the traditional Indian Rice Pudding, but would really like to break out of that rut. I'll bookmark this one for next time.

What an incredible idea... the new modern take on your dessert... both versions are new to me. This looks absolutely fabulous. I believe it is summer in Australia and it is winter here... but, this dessert still appeals to me with all the snow whirling and twirling outside today.

You're right, mango pudding is an essential component to the dim sum experience! What a lovely dessert, I think it'll be nice almost any occasion. I do love a rich moist chocolate cake, but sometimes it calls for a refreshing fruity one, this fits the bill just right.

I love chocolate but I think fruit-based desserts make more sense after a heavy meal.
This mango mousse is lovely, thank you for foregoing the use of gelatin, I hate the texture that gelatin imparts and the italian meringue is way tastier with it. Great idea to include condensed milk with the chantilly, all in all a great dessert!

Your mousse looks divine! I love how straight forward your recipe is.

As much as I love chocolate desserts I prefer a fruit based dessert because you don't get that horrible sickly feeling after eating it, and it can often be refreshing.

Mango is my favorite fruits. They are a little expensive this year around my area because of heavy rain around flowering time. Do you think it works OK with preserved ones? If it does, I can make this in the winter too.

@ lifestyle lift journey: It's best to use fresh mango for this recipe. Doubt it will work well with preserved or dried mango. Can you get frozen or canned ones from supermarkets?
