Vegemite Chicken

This Vegemite Chicken is inspired by Marmite Chicken which is a dish unique to Malaysian Chinese. Using Marmite in a Chinese dish is a clear influence of the British colonisation of Malaysia. It was once a very popular and tasty dish, a dish that I grew up with. It's also a long forgotten dish that I haven't tasted for at least 15 years. Not until I saw this recipe on Pig Pig's Corner.

It prompted me to think, "Why not replace the Marmite with Vegemite? It should work." Vegemite taste is stronger and more intense than Marmite but using it with the right subtle amount should create a beautiful chicken dish.

It took a bit of convincing for Mr J & Miss C to agree for me to cook this dish for dinner. Although we have called Australia home for the last 11 years, there is still a bit of unaustralian tastes in this family: All three of us are not fans of the good old Vegemite.

I cooked this dish while they were out for soccer training and when they came back they tucked into their dinner and licked their plate. I was surprised by how well all the flavours came together and it didn't taste odd at all.

Still not convinced ? Think: "Honey soy chicken marinated in Shaoxing wine with a hint of Vegemite."

Sounds good? You gotta try it.

Vegemite Chicken Recipe
(Inspired from Pigpigscorner's Marmite Chicken)
Serves 4

Ingredients

700 g chicken thigh fillet, cut into long strips
1 tbs honey
1 tsp dark soy sauce
1/2 tsp Vegemite
Toasted sesame seeds, for garnishing

Marinade:
1 tsp Vegemite
1 tbs honey
1 tbs light soy sauce
1 tbs Shaoxing wine
A dash white pepper powder

Method

  1. Marinate the chicken with marinade for at least 3 hours or overnight in the fridge.
  2. Heat 1 tbsp of oil in a frying pan on high heat. Add marinated chicken pieces, stir fry until lightly browned on all sides.
  3. Add honey, dark soy sauce and Vegemite. Stir to mix well. Lower the heat and leave to simmer uncovered until sauce thickened and very little sauce left.
  4. Season to taste.
  5. Garnish with toasted sesame seeds. Serve immediately with steam rice.

Ellie I have been waiting for this recipe. My nephew Caleb adores vegemite and I am sure he would enjoy this dish. Great way of using such an Aussie classic.

I've never actually had Marmite or Vegemite before. But I love "fusion" dishes with a sort of history behind them. I dunno if I can even find Vegemite in Los Angeles, but I'd love to try it!!

A great way to put the Australian into a Malaysian dish =D I don't mind eating vegemite - with heaps of butter on fresh soft bread. Might take a bit more convincing to eat it this way =p

I am not a fan of Marmite or Vegemite and neither is my family but they all seem to love my Marmite chicken (own invention but seemingly not too disimilair to the malay version you mentioned)
