
A few reasons for it, really. But mainly because we always felt bloated and thirsty after a meal from any of the chains above. The days we had such meals often ended with both of us laying on bed full of regrets, while lamenting about our poor choice for dinner. Until on one evening - for no particular reason - we made a firm decision that, no matter how tempted by all the Hot & Spicy promotions, we would not pick up the phone to dial their numbers. We have succeeded until now, we still throw away the promotional vouchers straight from the mailbox into the bin.
However, it doesn't mean we don't occasionally indulge in deep fried goodness. It's all about moderation. I am no expert in Korean cuisine and not a big fan of kimchi, but when I saw this Korean Fried Chicken in last month's issue of Gourmet Traveller magazine, I knew I had to make it.
I am a late comer to Korean cuisine. My knowledge of Korean cuisine extends to bibimbap, kimchi, bulgogi and seafood pancakes only. I tasted my first bite of Korean fried chicken during a long lunch at Simon's house prepared by his Korean family last year. I was immediately drawn to it. It's so moreish that I could munch on the wings all day long.
I did ask Simon for his family recipe but, knowing him as a perfectionist, he is still not 100% confident with his KFC recipe and he is still in the process of perfecting it. I couldn't wait any longer and went ahead with this recipe from Gourmet Traveller. It may not be the most authentic one but with it being twice fried and smothered with the moreish and addictive Korean chilli sauce, it's still finger licking good!!

Serves 6 as a snack
Gourmet Traveller - "This chicken is fried twice (or if you like, thrice) to become extra crisp. Toss it through the sauce after it's fried - thoroughly messy, but seriously good.
Ingredients
Vegetable oil, for deep-frying
2 kg chicken pieces (drumsticks and wings)
Thinly sliced spring onion, to serve
Batter:
115 g plain flour, sieved
2 tbsp cornflour
1 eggwhite, lightly beaten
Chilli sauce:
2 tbsp each soy sauce and rice vinegar
1 tbsp honey
2 tsp sesame oil
2 tsp sugar
10 g ginger (about 2 cm) piece, finely grated
1 garlic clove, finely chopped
65 gm (1/4 cup) gochujang

- For chilli sauce, combine ingredients in a large bowl, season to taste with freshly ground pepper and set aside.

- For batter, whisk flours, eggwhite and 170 ml cold water in bowl. Season to taste and set aside.
- Preheat oil in a deep-sided saucepan to 180C. Dip chicken pieces in batter and deep-fry in batches, turning occasionally until light golden (5-6 minutes). Drain on absorbent paper until cooled slightly (10-15 minutes).
- Deep-fry chicken again, in batches, until crisp and deep golden (6-8 minutes), drain on absorbent paper, then add to sauce, toss to coat and serve hot topped with spring onion.

Remarkable that you've been able to keep off the chains for so long - Good for you. I still find myself eating these once in a while especially rushing from business appt overseas... Do you have the same principle for Mc Donalds? This is some KFC - looks very delicious and I have the ingredients to make this!

I love Korean food! Although my knowledge of it is as limited as yours =) But still.....
I had Korean fried chicken for the first time a couple of weeks ago and I fell in love with it instantly!! This looks just as good as the one I had =) If it were not for the fact that I'm not a huge fan of frying, especially when it comes to meat, I would make this straight away!! haha....
Well done on your ability to stay away from fast food chains! hehe,,,,I get sick of it every once in a while, but I still love it =) As much as I know that it isn't any good for me =D

@ Shirley: Can't stay away from McDonald with kid and kid's friends. It's good to give them a treat once in a while and also they have healthy options on their menu.
Sticky chicken goodness.....yum yum yum. The husband is a vegetarian so I won't ever get a chance to make this amazing looking recipe, although I might try it with quorn one day, but it's just not the same.

I really like the ingredients for the sauce. I am sure it would also taste great on grilled chicken. I am not big on frying. We also never eat at any of these fast food chains. Just thinking about it gives me a stomach ache.

Even as someone who doesn't eat chicken, I admit I've been fascinated by these and have been trying to get my meat-eating boyfriend to try them and tell me about them. I hear the double-frying makes them extra-crispy and I love all spicy Korean sauces I've tried yet.

p.s. I've been reading lately how healthful fried foods can actually be if 3 variables are met, which are good starting product (organic & fresh), naturally pressed & high quality oil for frying, and proper oil temp. I hope it's true (smile)...

Take-outs at the chains are almost similar to dining out(at chains or non-chains), we usually come home thirsty and bloated. :( I am still too lazy (uncommitted) to cook everyday so it is hard to avoid "outside" food once in a while.

My mom is Korean and she has adapted the Korean spicy chicken and used the sauce on ribs and it is awesome! I can't wait to make these! My family and I are on a very similar mission to not eat out at fast food anymore too, most of the time it is easy but there are definitely days when you get a craving! You have inspired me. No more Fast food for me either! I find them rather uninspiring most of the time anyways and find them hard to swallow once I've actually tried to bite into them... the craving always last till the first bite then I remember why I don't like them!

There is a Korean fried chicken place in Queens, NY near my apartment, and it is so unbelievably delicious. Definitely an indulgent treat, but I agree, SO worth it every once in a while. Thanks for sharing the recipe!
