Deep-Fried Dumplings / Wontons

It all started with 300g of leftover pork mince and a packet of round dumpling wrappers in my fridge. I made a decision to make some dumplings out of them.

Then came the next decision: "What shape should I make them into?" I thought let's have some fun and I decided to make them into wonton instead of into the typical dumpling shape.

I spent an hour wrapping them into nice little parcels. I love folding them while reminiscing the old times wrapping endless pieces of wontons with my mum and my aunts when I was little.

Then came another decision I needed to make: soup or deep-fry? These round dumpling wrappers are slightly thicker than the square wonton wrappers. When you deep-fry them, they will give you a slightly thicker and more chewy texture than the thin and crispy texture you get from deep-frying the wonton wrappers. I love dumplings in soup but Mr J and Miss C prefer deep-fried. The final decision was made: deep-fry.

Now to the ingredients for the filling. This is the base recipe that I always use for dumplings, wontons or even pan-fried pork buns. It's very versatile. You can replace 1/2 of the pork mince with prawns. Replace the green onions with garlic chives. Add wood ear mushrooms or water chestnuts for some crunch or even add some wong bok to make the kids eat some greens.

Dumplings / Wantons Recipes
Makes 50

Ingredients

50 round dumpling wrappers or square wonton wrappers

Fillings:
300 g pork mince (or 150 g pork mince and 150 g chopped or minced prawns)
2 tbsp chopped green onions (or garlic chives)
1 egg, lightly beaten
1 tsp grated ginger
1/2 tsp salt
2 tsp soy sauce
2 tsp sesame oil
1 tsp shaoxing wine
1/4 tsp white pepper
wong bok, water chestnuts, wood ear mushrooms (optional)

Method

  1. To make fillings: Mix all ingredients until well combined.
  2. To shape wonton / dumpling: Place 1 tsp of filling in the centre of the wrapper.

  3. Wet the wrapper edge with water and fold the wrapper into half and seal well. Make sure you expel all the air.

  4. wet both end of the tips with water. Fold and press them together.

  5. Continue to make the dumplings / wontons. They are suitable for freezing.

  6. You can deep fry them and serve with sweet chilli sauce or make short soup with some Asian greens.

Im lazy usually i just steam them pan fried, but i definitely wont say no to deep fry... oh my crunchyness!

Fried, golden deliciousness is good! Hey Ellie, your dumplings all look so perfectly formed-pretty. I made something like this today too, but I stuffed mine with tofu. I felt guilty for deep frying, but it was so good. Yours look even better than mine did with that pork center-yum!

Thank god i'm reading this while having lunch. Chestnuts in dumplings are just so good. :) But hawkers rarely put them in these days. A bit too costly and they don't last.

Ellie, your wontons look really cute.The uncooked ones look so plump and prosperous. I usually fold my wonton into a chinese nugget shape... somewhat similar to what you do here but with the central lump 'inside the boat'... Will try folding it this way the next time.

Up until the last photo, these looked to me like bite-sized dumplings. The kind of size that you could pop a few of them in your mouth at once.

Would have been cool if they were that small but these look great all the same.
