Chocolate Rum and Raisin Slice

I baked this chocolate rum and raisin slice for the first time five years ago and I have been making it regularly ever since. It only requires a handful of ingredients, and after a few simple steps you are only a short 45 minutes away from plenty of heavenly slicepieces.

I often make it at 9am after dropping off Miss C at school and then it's ready by 10am for a morning tea with my girlfriends. Lots of chocolate and a bit of booze - it is always a winner.

Simple slice, simple pleasure.

Chocolate Rum and Raisin Slice Recipe
(Adapted from AWW's Simple Slices)
Makes about 15

Ingredients

125 g butter, chopped
200 g dark eating chocolate, chopped
1/2 cup (110 g) caster sugar
1 cup (170 g) coarsely chopped raisins
2 eggs, beaten lightly
1 1/2 cups (225 g) plain flour
1 tbsp dark rum

Method

  1. Preheat oven to 160C. Grease 20 cm x 30 cm lamington pan.
  2. Combine butter, chocolate, sugar and raisins in medium saucepan; stir over low heat until chocolate is melted. Cool to room temperature. Stir in remaining ingredients, mix well; spread mixture into prepared pan.
  3. Bake in oven about 30 minutes or until firm; cool in pan.

  4. Serve dusted with sifted icing sugar, if desired.

Note: This recipe can be made a week ahead; store in an airtight container.

It's not difficult to create optical illusion, right?

Australian Women's Weekly slices cookbooks are, (in my experience so far), fail proof and so easily adaptable. I'm a Kiwi living in Japan with my Canadian husband and my Japanese friends and hubby love that the down-under recipes are not saccharine sweet like North American baked goods or dry like Japanese baked goods. Everybody buy a copy!

I thought your chocolate slice was placed on a glass table and your platter was placed under the glass below =D Maybe you could try that next time:D

@ Luca: Yes, it can be done with glass but it's more difficult because of the reflection from the glass. I bought my momofuku cookbook from bookdepository.co.uk they are reliable, cheapest and free worldwide postage. I bought the book a while ago. Can't remember the price but I heard they have released a paperback version which is cheaper than the hardcover.
