I baked this chocolate rum and raisin slice for the first time five years ago and I have been making it regularly ever since. It only requires a handful of ingredients, and after a few simple steps you are only a short 45 minutes away from plenty of heavenly slicepieces.
I often make it at 9am after dropping off Miss C at school and then it's ready by 10am for a morning tea with my girlfriends. Lots of chocolate and a bit of booze - it is always a winner.
Simple slice, simple pleasure.
(The secret behind this floating chocolate slice shot is revealed at the bottom of this post)
Chocolate Rum and Raisin Slice Recipe
(Adapted from AWW's Simple Slices)
Makes about 15

125 g butter, chopped

1 1/2 cups (225 g) plain flour
1 tbsp dark rum

Method
- Preheat oven to 160C. Grease 20 cm x 30 cm lamington pan.
- Combine butter, chocolate, sugar and raisins in medium saucepan; stir over low heat until chocolate is melted. Cool to room temperature. Stir in remaining ingredients, mix well; spread mixture into prepared pan.

- Serve dusted with sifted icing sugar, if desired.
Note: This recipe can be made a week ahead; store in an airtight container.

It's not difficult to create optical illusion, right?

Love the pic of floating choc slice very much. It's very clever to make use of a simple trick and got an amazing shot.

The slices look very dense and moist. :)
Oh, I used your Dongpo pork recipe. Altered it a bit:

Ellie,
I like the magical floating choc slice. It is really nice and easy trick. But i don't think i will make out any time.
For a moment, I thought you'd gotten some tip from David Copperfield.
Hahahahaa.....

Looks so moist & rich. Perfect with a cuppa.
Love that you share it with gfs once the kids are packed off to school.. whilst the cat's away..
Wonderful slices! So scrumptious looking.
I've already tested that method and it works wonderfully. Great optical illusion.
Cheers,
Rosa
Once the cat is away the mice come out to play =D Ohh sounds so luxurious mmm can I have a slice pleasE? When I saw you tweet that really did think it was suspended in mid air, or perhaps you had a glass box of some sort over the brownies.
OMG!! That is super clever! I was thinking of invisible strings and glass and angle... love your work.
haha, genius about the floating shot.. and congrats that u r in Masterchef magazine :D
I love this recipe.Should try it very soon!
Australian Women's Weekly slices cookbooks are, (in my experience so far), fail proof and so easily adaptable. I'm a Kiwi living in Japan with my Canadian husband and my Japanese friends and hubby love that the down-under recipes are not saccharine sweet like North American baked goods or dry like Japanese baked goods. Everybody buy a copy!
Very chocolicious! Can't resist anything chocolate. Awesome pics!
Nothing is better than a good chocolate slice to share with friends and hear all the mmmmmm and see all the smiles and then total silence....haha.... as the mouths were full of the cake :D
Hi Ellie,
I thought your chocolate slice was placed on a glass table and your platter was placed under the glass below =D Maybe you could try that next time:D
Btw, I don't know if you check your comments for older posts but I was contemplating whether to buy the Momofuku cookbook and was wondering where you bought yours from and for how much?
Thanks!
I am not a big fan of rum and raisin but I could never say no to this! Looks so tasty mmm
Haha that's awesome!

Oh yum looks like brownies !! I have all the ingredients in the pantry!! Sweet.. I shall make this :P
I love this cake, Ellie! I`m going to do this next time :)
Neat trick, Ellie! I love tricks (smile). This Rum & Raisin slice sounds wonderful too. That's my favorite type of ice cream, so I'm sure this baked goodie would go quickly around here!
looks simple yet delicious! and the pic idea is super cool!
@ Luca: Yes, it can be done with glass but it's more difficult because of the reflection from the glass. I bought my momofuku cookbook from bookdepository.co.uk they are reliable, cheapest and free worldwide postage. I bought the book a while ago. Can't remember the price but I heard they have released a paperback version which is cheaper than the hardcover.
Ellie,
WOW... Very clever..

Rum raisin.... DIVINE! I love the photography, and the optical illusion. I couldnt for the life of me think how you did that till i got to the picture. Very clever and very beautiful. Cant wait to make this. I hope i do it justice....
What a neat trick! Thanks for sharing.
Dang! These look so good, Ellie! Believe it or not, I am about to start making rum and raisin ice-cream this morning! haha :P I swear - I am not stalking you!
I just made blondies - first cousins to more popular brownies! The first picture is so gorgeous. I can't wait to try this recipe as one of my all time favorite ice cream flavors is rum raisin.
Chocolate with Rum AND raisin is THE BEST combination in the world!!! So moist and dense; that's my kind of slice thank you
Chocolate, rum and raisins-- sounds so yummy. Your girlfriends are very lucky to have you as a coffee buddy.
I often soak my raisins in rum before making oatmeal raisin cookies, so I know I love them together already. Add chocolate and I'm beyond sold.
The pictures look fun! These slices remind me of brownies.
Love the rum and raisin flavours here Ellie...perfect with a nice cuppa too! Love the illusion behind the shot as well.
Omg why do you always seem to post something which makes me salivate almost immediately?!!

Rum and raisin with chocolate to boot, this is all kinds of good. Some magic thrown in as well makes for a total winner!
