Jaffa Macarons

Holland made it into the Soccer World Cup final!

Being married to a Dutch, this means I have to bake something Orange to celebrate the Dutch team making it this far for the third time ever and for the first time since 1978.

After seeing Adriano Zumbo's macarons tower on MasterChef last week, Miss C urged me to make macarons. Combining the World Cup and MasterChef fever, I decided to create these Jaffa Macarons which are made of Orange Flavoured Shells and Dark Chocolate Ganache to celebrate this rare occasion.

We don't care about Paul the Psychic Octopus predicting that Spain will win. I know for sure that we will be awake by 4:30 am tomorrow morning, munching on these jaffa macarons and cheering for the Dutch team.

I have been experimenting a few macaron recipes and found that the recipe from my fellow blogger friend Trissalicious is the most reliable, consistent and best tasting. I would highly recommend anyone who is for the first time attempting to bake macarons to use her recipe. Being an expert in making macarons, I am sure she will be more than happy to answer any of your questions.

Jaffa Macarons Recipe
(Adapted from Trissalicious)

125 g almond meal
150 g icing sugar
100 g caster sugar
3 egg whites (100 g)
2 tsp orange zest
1 tsp orange powdered food colouring

Method
  1. In a food processor grind the almond meal and icing sugar until very finely ground.
  2. Place the egg whites in an electric mixer and whip the whites until soft peaks.
  3. Add the sugar, 25 grams at a time while the egg whites are being beaten.
  4. Beat the egg whites until stiff peaks.
  5. Fold the ground almond meal mixture, orange zest and food colouring into the egg white mixture in two additions until fully amalgamated.
  6. Pipe on to baking trays which have been lined with baking paper.

  7. Let the macarons dry for around 30 minutes until a "skin" form.
  8. Bake in a pre heated fan forced oven (150c) for 15 minutes.

Chocolate Ganache Recipe
(Adapted from Trissalicious)

Ingredients

200 grams dark chocolate
200 ml cream

Method

  1. Chop the dark chocolate into even pieces (the smaller the better) and place in a bowl.
  2. Heat the cream until it starts to boil.
  3. Pour the cream into the bowl of chocolate and let rest for 1 minute.
  4. With a rubber spatula, mix the ganache fully.
  5. Cool and let it set in room temperature.

Gorgeous! And I'm supporting the Dutch too - albeit, my incentives are purely financial as I drew them in the office sweeps. I have to say Ellie, there are very few of us on the Dutch supporting side. I'm very outnumbered by Spanish fans :(

These look great! Such beautiful feel! I love the idea of combining both Mastechef macaron and World Cup fevers in one! 4.30am wake-ups are hard but a breakfast of macarons might convince me! Good luck to Holland - may the best team win!

@ Shaz: I bought my powder coloring from Essential Ingredient before they moved to Rozelle. Can't wait to read your post.

@ mademoiselle délicieuse: I used the powder colouring bought from Essential Ingredients before they moved away from Crows Nest. The only way to get the vibrant colour on macs is by using powder colouring.

These are just perfect for my partner. He's been supporting the Holland team since he was a young boy and chocolate and orange is one of his favourite flavour combinations! Why didn't I think of this?

Lovely macarons - the colour is so vibrant! :) I have to admit I'm not supporting anyone in particular tonight, I think it'll be nice whoever wins as both sides have never won before. And now I shall look around anxiously to hope no ardent Spanish/Dutch fan will try to yell at me...

I haven't made macarons for the longest time. I went through a macaron phase when I would bake it everyday to make sure that I really did capture the Macaron Mojo...hahaha - otherwise I am not really a big fan of meringue. Love the even orange colour of your macarons! I am neutral for tonight's game- though I must say I am more eager to see if Octopus Paul would fail in his prediction! hahahha

Ellie, gorgeous macs! What more can I say! Stunning, man! Hope the match tonight would be as exciting as your macs here ... But, I don't think I'm gonna watch it since I'm not a big soccer fan. The last time I watched it was when I was all crazy about the U.S. player Landon Donovan. But that was like what ... 8 years ago!!?? Haha! Have fun watching with Mr. J! I'm eager to see Octopus Paul is gonna make it this time with its prediction! Haha! I don't believe in all these, given my cynicism in everything supernatural. Haha!

We are wishing for the Dutch to win today but Paul said that Spain will be winning (I hope not). I am proud of my German team making it to third place, so.

Even if the Dutch didn't win the world cup - your macarons are a sure winner!! What a perfect tribute to your favourite football team - sometimes it's not the winning but the journey to get there - they played really well! I love how you combined orange and chocolate - a great combination.

I can personally say that Trissa's recipe for macarons works like a charm. These Jaffa macarons look absolutely beautiful Ellie. The colours are so vivd and Jaffa is one of my favorites. Shame that Holland lost.

I've tried making macaron with French Meringue method and Italian Meringue and so far just can't seem to get it right. I'm not defeated yet and will keep on trying. Thanks for the inspiration.

Woah, these are absolutely perfect. I'm going to try grinding the almond meal down as you suggest, my attempt (at a similar recipe) just didn't come close to your results!

I'd been toying with the idea of making macarons, but all the recipes I found has this egg white powder. We only got egg white powder from Whilton and it's quite costly.

Your recipe here do not have egg white powder, so I'll definitely come back for the recipe later when I'm ready for the challenge.

After witnessing Dutch hooligans at Wimbledon a few weeks ago, I can only imagine what Dutch fans must be like at the soccer! Sorry for you both that they lost, but happy for my tipping that they did ;)

omg I tried this recipe today (my third attempt at macarons) and I have to say this after my second attempt my husband and son were not macaron fans but they LOVE these!! The orange and chocolate is a match made in heaven. Thanks so much!
