Homemade Mayonnaise and Roast Chicken with Avocado Sandwich

I love Masterchef. Not only because of the show itself. It is also because it has provided my family a daily entertainment that bonds us together. Every night, except Saturday, 7:30pm on the dot, Miss C will announce, "Masterchef is starting now!" and that announcement is followed by her singing and dancing to her favourite song: The Masterchef theme song, Katie Perry's "Hot & Cold". Mr J and myself will put down whatever we are doing and gather in front of our flat screen TV.

It's wonderful to have a TV show that all generations do enjoy. Not only we group together to watch it, we talk and discuss about the show. We root for our favourites. We jump for joy if they suceed in their win and sulk when they get eliminated. The best way to end the day is to read the daily recap from reality ravings blog. I especially enjoyed the wittiness injected by injera's recaps during the absence of reality raver.

The show has also encouraged Mr J and Miss C to be more interested in food as to how to cook, learning and tasting new food. A few weeks ago, Gary was demostrating how to make mayonnaise during the Masterclass. Mr J was so amazed by what went into making it and how ridiculously easy it is that he declared he was going to make it the following day and subsequently declared he will never use store bought mayonnaise ever again.

It takes less than 5 minutes, 4 ingredients and a food processor. That is all. The only catch is that it involves raw egg which is not suitable for those who might be at risk of salmonella poisoning. So make sure you use the freshest eggs for this recipe.

Mayonnaise is really versitile. In our family, we love it with thick-cut chips and on our sandwiches.

My favourite lunch time sandwich is roast chicken and avocado on sourdough sandwich. It's something you can assemble within minutes. I use leftover roast or poached chicken, slice up avocado, drizzle with lemon juice and a good dollop of mayonnaise.

Homemade Mayonnaise Recipe
(Adapted from Masterchef)

Ingredients

1 egg
2 tsp Dijon mustard
1 tbs white balsamic vinegar
1 cup olive oil

Method

  1. Process eggs, mustard, vinegar and ¼ teaspoon of salt in a small food processor until creamy.

  2. Add 1/4 of the oil to the egg mixture and process until slightly thicker.

  3. Add the remaining oil in batches until the mayonnaise is thick and creamy.

Real mayonnaise like this deserves a good batch of chips! I enjoy the show too, although I wish they would cut out a lot of the dramatics (but then again, this is television...)

I was amazed when Gary whipped up that mayonnaise so quickly and easily. It's really a great one - and so good on roast chicken, as you've shown!

Ohhh, how did you know I was thinking today that I want to make my own mayonnaise?! Great recipe, Ellie, and I shall be making it pronto. :-) I added extra lemon to my regular mayo today and yum!!

Thanks for the mention - I'm glad you're enjoying the recaps! I had a ball doing them while RR was away, but am glad to be relieved of the responsibility.

As much as I dissed the contestants who didn't know how to make mayo, I have to confess to not having done so myself. Will definitely have a go this weekend (and I love good mayo on chips...).

Another food blogger I follow carried on making and eating mayo during pregnancy - she just used yolks from hard boiled eggs insteadwith no major diff to the result - a help for anyone at risk from uncooked egg.

When I saw Gary making this I told looked over at the boy and said, "I'd eat that straight off a spoon. No need for anything else." I got a shake of the head in response. Yum!

Holy cow that is amazingly easy! I've only ever seen the whole "slowly drizzle the oil while whisking furiously" way of making mayonnaise.

I'm so glad you mentioned eating mayonnaise with chips. I used to do that when I was younger and my family would look at me like I was crazy!

I keep meaning to make homemade mayo. The stuff at the store scares me. But this seems so light and natural. I bet the flavors really stand out.

I don't like mayo too much, but perhaps it is because I have not made my own. I am afraid of doing so though, if it rocks it out with hot chips. I don't want any more motivation to crave chips!

My hubs always asked me to make fresh mayonnaise at home, and with my kids being so young, I'm holding back.

Maybe when they are older. Or if I started rearing chicken and they laid eggs. :P

Any recommendations on olive oil? I tried home made mayo once before and the olive oil was overpowering sickly. Maybe a cheaper tasteless brand of olive oil would be best?
