Pepper-Roasted Garlic and Lemon Chicken

The conversation went like this.

"I am making roast chicken for dinner." I declared.

"Thomas Keller or Tony Bourdain's recipe?" Mr J answered with excitement.

"None of the above. It's from the Australian Women Weekly."

He looked a little stunt. Didn't look very happy.

I get that some men are so spoiled. Once you pampered them with great chef's recipes, there is no turning back. They take it for granted.

The pictures on this post are not the best because of they were taken in a low light condition late in the evening. I wasn't sure if I wanted to post them but this is such a great roast chicken recipe that I am sure you will forgive the less than perfect shots.

Pepper-Roasted Garlic and Lemon Chicken Recipe
(Adapted from AWW's Roast)
Serves 4

Ingredients

2 bulbs garlic
2 kg whole chicken
Cooking-oil spray
2 tsp salt
2 tbsp cracked black pepper
1 medium lemon (140 g), cut into eight wedges
1 cup (250 ml) water

Method
  1. Preheat oven to 200C.
  2. Separate cloves from garlic bulb, leaving skin intact. Wash chicken under cold water; pat dry inside and out with absorbent paper. Coat chicken with cooking-oil spray, press combined salt and pepper onto skin and inside cavity. Place garlic and lemon inside cavity; tie legs together with kitchen string.

  3. Place chicken on small oiled wire rack in large flameproof baking dish, pour the water in baking dish; roast, uncovered, 50 minutes.

Hi Ellie, I use the same ingredients on my "to go" chicken. Sometimes I put bacon on top of the breast. What a great flavor combination. Have a great weekend!

Love a good roast chicken. So simple yet so wholesome and satisfying =) Your husband may be spoilt by your cooking prowess but it's so endearing that he knows where your recipes come from!

I love a good roasted chicken, Ellie, and this looks delectable. I also admire that you were able to get good photos of the chicken. I tried to once and it looked like the pics were of some kind of alien baby (smile)...

@ Angie: The 2nd last picture shows the uncooked chicken. The rest are well cooked. The low light situation might have given the impressive that the chicken is not properly cooked.
