Chinese Barbecued Chicken Wings

Three long years of waiting, hoping and praying. Hearing these words from the lips of our doctor: "You may never be able to have a child." Our hearts felt like being ripped apart.

We clung on to the little hope we had, the faith we believed in.

Eight years on. I was making this rocky road with Miss C on Mother's Day. Celebrating this miracle that life brought to us, a blessing from God.

The day proceeded with Mr J and Miss C making a dinner for me. Miss C choose to cook her favourite Chinese Barbecued Wings and a sweet finale of Raspberry Royales.


Chinese Barbecued Wings Recipe
(Adapted from AWW's Kids Cooking)
Serves 4

Ingredients

1 kg chicken wings
1 tbsp peanut oil
1 tbsp soy sauce
2 tbsp char siu sauce
1 tsp five-spice powder

Method

  1. Preheat oven to 220C.
  2. Cut wings into three pieces at joints; discard tips. Combine oil, sauces and five-spice in large bowl. Add chicken; toss chicken to coat all over. Cover; refrigerate 3 hours or overnight.
  3. Place chicken, in single layer, on oiled wire rack set inside large shallow baking dish; brush remaining marinade over chicken. Roast, uncovered, in a hot oven about 30 minutes or until chicken is well browned and cooked through.

Raspberry Royales Recipe
Serves 6

Ingredients

250 g packet jam rollettes (mini Swiss rolls)
300 ml vanilla custard
250 g raspberries
300 ml thickened cream
2 tbsp icing sugar
Pink food colouring

Method

  1. Cut each rollette into quarters; divide rollette quarters among six 1 1/2-cup (375 ml) serving glasses, pressing into bottoms and sides.
  2. Pour vanilla custard over rollettes; sprinkle with raspberries.
  3. Beat cream, sugar and a few drop of food colouring in small bowl with electric mixer until soft peak form.

  4. Spoon equal amount of cream mixture over each glass of royale mixture.

They are the joy of my life. Happy 11th anniversary, J!

These chicken wings sound wonderful. I'm going to check the health food store tomorrow to see if they have some organic wings-a craving is setting in...

such a touching story. i can relate to being told you will not have a child. for me it was my second one and he is now turning 3 and cooking up a storm. congratulations and happy mother's day. and i'm trying those chicken wings. all my son wants to eat these days is chicken. he will love these. thank you.

I am so making these for my daughter. Will link back to your site when I do a post. What is a good substitute for char siu sauce...bbq sauce? Any other suggestions? I am reading an Aust. cooking book and mentions char siu sauce as well....

@ A Little Yumminess: I am sure your daughter will love it! BBQ sauce is a good replacement. Otherwise, hoisin sauce or oyster sauce can also be used.

Aww..... this is such a sweet post.. and she actually is able to cook something for you.

Btw, it took me 5 yrs to try for my eldest too. I can imagine your anxiety. After her arrival, kind of 'cure' whatever I was having. The 2nd one came quite quickly when we tried for her. :)

Kids are a blessing aren't they?
