Peanut Butter Chocolate Fondant (Molten Cake)

An 'Alice in Wonderland' Movie Premiere, a bag full of Lindor Peanut Butter Chocolate Eggs and a personalised Easter egg by Lindt. It was a happy occasion.

Dutch love peanut butter. It must be because of the strong Indonesian influence in Holland. Most of the peanut butter chocolate eggs were finished in no time by my parents-in-law (especially my father-in-law, he loves them).

This prompted me to make these peanut butter chocolate fondants for dessert last night. For their farewell dinner. They left today. It's always a sad occasion to say farewell to our parents at the airport. Holland and Australia are at two opposite ends of the world, separated by a 24-hours plane trip. We are hoping to see them again next year, at their place.

We will be back at the airport tomorrow. Our bags are packed and we are ready to go. Fiji is our destination. I doubt I will update my blog while I am away. So see you in 10 days time or find me on Twitter.

Peanut Butter Chocolate Fondant Recipe
(Loosely adapted from Adelaide's Sparrow Kitchen and Bar's Peanut Butter Chocolate Fondant with salted caramel ice-cream from Gourmet Traveller Magazine Nov 2009 issue)
Serves 10

Ingredients

250 g dark chocolate (I use Lindt Excellent 50% Cocoa), coarsely chopped
130 g crunchy peanut butter (I use smooth peanut butter)
20 g butter, coarsely chopped
6 eggs, at room temperature
200 g caster sugar
100 g plain flour, sieved

Method

  1. Preheat oven to 150C fan-forced (I use 160C fan-forced). Melt chocolate, peanut butter and butter in a heatproof bowl over simmering water, then stir until smooth (3-5 minutes). Remove from heat, cool slightly, stir in yolks and set aside.


  2. Whisk egg whites until soft peaks form (2-3 minutes), then with motor running gradually add sugar an whisk until stiff and glossy. Fold into chocolate mixture in batches, then fold in flour and divide between ten 250 ml-capacity buttered and sugar-dusted ramekins. Refrigerate to rest (1 hour), then bake until edges and just set and centres are still soft (6-7 minutes). (Note: I made them in advance and kept in the fridge for longer than 1 hour. I had to bake them for 14 minutes).
  3. Serve with salted caramel ice-cream.

That dessert looks so rich, chocolatey and delicious. I'm sure with awesome flavour from the peanut butter too. I can understand the feeling when sending loved ones to airport. I dig this, I would absolutely dig into this! Sometimes molten chocolate cakes get a little, overwhelmingly chocolately (if that's even possible) so the salty PB is bound to be doing it a great favour! :) mmmmm. No favours to my waistline tho!

Isn't it funny that Indonesian has lots of sauces with peanuts but we're not peanut butter fans.
I believe in Holland, they call peanut butter pindakaas. CMIIW.

I love anything peanut butter! I've had bad luck with "molten cakes" before (I can never seem to get the cooking time right) but I may have to try this. I mean, anything that includes "serve with salted caramel ice cream" as an instruction has to be delicious!
