Apple and Pistachio Frangipane Galette

Yes, I am back from Fiji. Landed in Sydney airport a few hours ago. No, I didn't run straight into my kitchen and started baking. I made this galette months ago but didn't get to post the recipe. This is another of my many favourite dessert recipes from Bill Granger.

Apple and Pistachio Frangipane Galette Recipe
(Adapted from Bill Granger's Simply Bill)
Serves 6

Ingredients

375 g (13 oz) puff pastry
1 egg yolk, beaten
Frangipane (recipe follows)
2 green apples, peeled, quartered, cored and thinly sliced
melted butter, for brushing
1 tbsp ligurian honey (Note from Bill: I like to use ligurian honey from Kangaroo Island off South Australia. If you can't buy that, try lavender or blue gum honey or just your favourite funny variety)

To serve:
Ligurian honey
Chopped pistachio nuts, shelled and unsalted
Vanilla ice cream

Method
  1. Preheat the oven to 220C (425F). Poll out the pastry to 3 mm (1/8 inch) thick and then trim to 22 x 30mm (8 1/2 x 12 inches) to help the pastry rise evenly. Place on a paper-line baking tray. Use the point of a sharp knife to score a 1 cm (1/2 inch) border around the edge of the pastry, being careful not to cut all the way through. Prick the centre all over with a fork and brush with egg yolk.
  2. Spread the frangipane even;y over the pastry within the scored area. Layer the apple slices over the top, brush lightly with melted butter and bake for 15 minutes. Reduce the oven to 200C (400F). Drizzle with the honey and bake for another 15 minutes or until golden. Drizzle with the extra honey, sprinkle with pistachios and serve immediately with a scoop of vanilla ice cream.

Frangipane Recipe

Ingredients

3 tbsp pistachio nuts, shelled and unsalted
3 tbsp ground almonds
40 g (1 1/2 oz) unsalted butter, softened
3 tbsp caster (superfine) sugar
1 egg yolk
1/4 tsp natural vanilla extract

Method

  1. Crush the pistachio nuts with a rolling pin and then fold together thoroughly with the remaining ingredients.
