
I love quick and easy dinner ideas. I collected a lot of great easy dinner recipes over the years. This Thai Pineapple Fried Rice has to be one of the favorites in my family. I added curry powder and fish sauce to it which I find they blend very well with the sweetness of the pineapple.

Thai Pineapple Fried Rice Recipe
Ingredients

2 cups rice, cooked in rice cooker or pan
250 g chicken thigh fillet, diced
6 large king prawns, peeled with tail on
1 cup fresh chopped pineapple (from 1 small fresh pineapple, reserve the shell)

1/2 cup frozen green peas, thawed
1 brown onion, finely chopped
1 tbsp curry powder
2 tbsp fish sauce
2 tbsp soy sauce

Salt and pepper to taste
Snow pea sprouts for garnish

Method
- Shell and devein prawns, leaving the tails on.
- Heat oil in a wok or a large frying pan until very hot.
- Add onions and stir fry until lightly brown.
- Add chicken, continue to stir fry until it changes colour. Add prawns and stir fry for another minute. Add add curry powder, fish sauce and soy sauce and mix well.
- Add rice, green peas and pineapple. Continue to stir fry until well combined. Adjust seasoning.
- Serve fried rice in pineapple shell and garnish with some snow pea sprouts.

That does look super yummy Ellie - loved the addition of curry powder - seems like the most difficult part of making this dish is trying to remove pineapple from the shell and making it look as beautiful as you've done?

Pineapple halves makes for such killer bowls! This type of dish is always one of my faves when I go to Thailand too. Beautiful photos!

I love Thai pineapple fried rice, second to Yangzhou fried rice! It's frugal to use the "shell" of pineapple as "platter!" Haha ... Will do so in the future ... as Chinese New Year is around the corner ...

I just made this for my parents and it was a big hit. I substituted red snapper for the prawns (which my dad can't eat), and it was so quick and easy too make. Mine, however, wasn't nearly as pretty as yours is.
