What food takes you back to your childhood? For me, it is Kaya Puffs (coconut jam in puff pastry).
There are two main components in a kaya puff. Puff pastry and kaya (coconut jam). You can either go all the way to make your puff pastry from scratch and use homemade kaya (my homemade kaya recipe can be found HERE) or take the easy way to use ready-rolled puff pastry and store bought kaya. Either way, you will end up with a delicious and super moreish Malaysian snack.
Kaya Puffs Recipe
Ingredients
Pastry:
Homemade (recipe HERE) or ready-rolled puff pastry
Filling:
Homemade (recipe HERE) or store bought kaya

Method
- Roll out the pastry to 5 mm thickness (1/4"). Cut out as many circles as you can using round-shaped cookie cutter.
- Put a tablespoon of kaya onto the rolled out pastry.

- Fold it into half.

- Press to seal the edge.

- Pleat the edges neatly.


- Place on greased trays. Brush with egg glaze on the surface. Bake in preheated oven at 220C for 10 minutes or until golden brown in colour.

- Remove from oven and serve hot.

Being a traditionalist, I generally opt for the simple blend of kaya, butter and whitebread toast. These puffs look like a delectable fusion of that and ordinary curry puffs. I may well command my minions to make some for me...

I had a friend at school that used to bring us all Kaya Puffs. Her mum used to give us the kaya in little bottles. I used to have it on toast. Its so good.

Kaya in Sabah tasted really good and I suspected it's the fresh coconut cream they use. Not so easy for us to get here in Aust. Do you have a recommended brand for coconut cream? And kaya as well?

@ The Ninja: Kaya is easily obtainable in Australia these days. They are available in most asian grocery stores. I like the Yeo's brand kaya. I would recommend to put the jar/can of kaya in the fridge overnight before making these puff. It's solidifies the kaya to make folding and pleating easier.
