My daughter little Miss C turns 7 today. A good reason to celebrate and a good reason to bake. Lots of cupcakes to share with her class teacher and classmates. My fussy little Miss C only likes vanilla butter cake. So here we are making these mini vanilla cupcakes with butter cream icing.
I baked the cupcakes and she helped me with icing them and dipping them in the 100s and 1000s (sprinkles / jimmies). Her favourite colour is blue. So lots of blues - blue with green, blue with orange and blue with everything.
We are having a birthday party tomorrow (Saturday). So all her friends can come to celebrate her birthday. The official birthday cake will be made tomorrow. No more blue. I am making it and it will be a big PINK cake for my little princess. But it will still be a vanilla butter cake with butter cream icing. I think it's a good compromise :)
Mini Vanilla Butter Cupcakes Recipe
Makes 24
Ingredients
1 cup (150 g) self-raising flour
90 g soften butter
1 tsp vanilla extract
1/2 cup (110 g) caster sugar
2 eggs
2 tbsp milk
Butter cream icing:
125 g butter, softened
1 1/2 cups (240 g) icing sugar
2 tbsp milk
Method- Preheat oven to 180C. Line 24-holes mini muffin pan with paper cases.
- Sift flour into small bowl, add butter, extract sugar, eggs and milk; beat with electric mixer on low speed until ingredients are combined. Increase speed to medium, beat until mixture is changed to a paler colour.
- Divide mixture into cases. Bake about 15 minutes. Stand cakes 5 minutes before turning top-side up onto wire rack to cool.
- To make butter cream: Beat butter in small bowl with electric mixer until as white as possible; beat in sifted icing sugar and milk, in two batches.

Beautifully decorated! Hopefully your daughter will get to like more cake flavours soon, but in the meantime you seem to be making the most of vanilla buttercake.
