What do you do when you have a sick child and you are home bound on the weekend?

Choco-Coconut & Pistachio Brownies Recipe
Ingredients
1 cup shredded coconut
1/2 cup butter or margarine, melted
1 cup sugar
1 tsp vanilla essence
2 eggs
1/2 cup flour
1/3 cup cocoa
1/4 tsp baking powder
1/4 tsp salt
1/4 cup pistachio nuts, roughly chopped
- Heat oven to 175C.
- Grease and line a slice tin.
- Combine butter, sugar, egg and vanilla essence in a bowl.
- Sift together flour, cocoa, baking powder and salt.
- Add with 3/4 cup shredded coconut and chopped pistachio nuts to butter mixture.
- Mix together well.
- Spread mixture evenly over base of tin.
- Sprinkle remaining 1/4 cup shredded coconut over top.
- Bake 25 - 30 minutes or until brownies begin to pull away from sides of tin.
- Cool completely in pan.
- Cut into squares. Makes 16.

Yummy yum yum. I can't have the pistachios but I've had a crunchy coconut brownie combination at Zumbo and it was amazing. Yours looks delicious!
